Frying with Extra Virgin Olive Oil

It’s one of the most persistent myths in the kitchen: “You shouldn’t fry with extra virgin olive oil.” Many consumers mistakenly believe that olive oil immediately develops toxic substances when heated, and instead opt for cheap, refined sunflower or rapeseed oils.

But what does modern food science say about this? Can you fry, cook, and deep-fry with extra virgin olive oil? The short and scientifically proven answer is: Yes, absolutely! High-quality extra virgin olive oil is not only suitable for frying but is also one of the most stable and healthiest cooking oils available.

1. The Smoke Point of Extra Virgin Olive Oil

The crucial factor when heating cooking oils is the so-called smoke point – the temperature at which the oil begins to smoke, oxidize, and form harmful trans fats.

Normal pan-frying takes place at temperatures between 160°C and 180°C. However, the smoke point of a genuine, low-acid extra virgin olive oil (like our Koroneiki variety) is 205°C to 210°C! So, when frying, you have a safe buffer of over 30 degrees.

2. Chemical Stability: Why Olive Oil Beats Sunflower Oil

The smoke point alone doesn’t tell the whole story. Extra virgin olive oil consists of over 75% monounsaturated oleic acid, which is extremely heat-stable. Refined sunflower oil, on the other hand, consists mainly of polyunsaturated fatty acids, which quickly break down under heat and form carcinogenic aldehydes.

In addition, the natural polyphenols and vitamin E in extra virgin olive oil act like a heat shield, protecting the fatty acids from oxidation.

3. Three Golden Rules for Frying with Olive Oil

  • Don’t let the oil smoke: Heat the pan over medium heat. As soon as blue or white smoke appears, the pan is too hot – remove it from the stove briefly.
  • Crispy crust without greasiness: Since olive oil immediately forms a fine crust around the food (e.g., potatoes or fish) when heated, the food absorbs less fat and remains wonderfully crispy.
  • Avoid multiple uses: After deep-frying, filter the oil through a fine sieve and use it a maximum of one more time.

Conclusion

Lose your fear of using your extra virgin olive oil for sautéing, frying, and baking. The single-varietal Koroneiki olive oil from Terra & Tree offers you the perfect balance of heat stability, health, and Mediterranean indulgence.
